Baked Salmon and Spice Mix

Haven’t made this in a while but it’s so good. Previously I had used a store bought spice mix but being the frugal gal that I am, I decided to make my own. I used pretty much the same amount of each spice listed (a good teaspoon) except for the salt which I added based on taste.

Spice Mix:
– salt
– red peppercorns
– mustard seed
– garlic powder
– dill
– black pepper
– paprika

Directions:
– lay fresh or thawed salmon fillets in a pan (I used one 560 gram package of frozen salmon fillets, thawed and skinned)
– cover generously with sour cream (I used just over 2 dl of light sour cream)
– sprinkle with some of the spice mix (I find the above spice mix recipe yields enough to use at least once more)
– cover pan with foil
– bake in a 200 degree Celsius oven for about 40 minutes.

I like to serve this with potatoes and carrots.
